Espresso Biscuits

Coffee Cocoa cookies

This is my first try baking biscuits. I bake though but not biscuits. What do I bake? I bake mostly muffins,cakes and sometimes, cookies. This time, I tried Martha Stewart's Espresso biscuits. Well, I cheat a little, I used decaffeinated instant coffee instead of espresso coffee. I came across this recipe while browsing a special edition of cookies from Martha Stewart. Since I was out of eggs, this recipe was perfect for me. It was easy to make until the shaping part. My dough was to sticky and hard to shape. I used an ice cream scoop to help me shape the dough.
These cookies are chewy and taste a bit sweet for me. I guess, the next time, I make them, I'll cut down the amount of sugar used.

So here is the recipe for Espresso Biscuits,

Ingredients :

Makes 16

1 1/2 cups all-purpose flour

1/2 cup Dutch cocoa

1 tablespoon finely ground espresso beans ( I used instant coffee powder)

1 cup (2 sticks) unsalted butter, room temperature

3/4 cup confectioners' sugar ( I used granulated sugar)

1 teaspoon pure vanilla extract

Directions :

  1. Heat oven to 350 degrees with two racks spaced evenly apart. Line two baking sheets with parchment paper. Sift together flour, cocoa, and espresso beans; set aside.
  2. In the bowl of an electric mixer fitted with paddle attachment, combine the butter, confectioners' sugar, and vanilla until creamy, 3 to 4 minutes. Gradually beat the flour mixture into the butter mixture, scraping down sides of bowl twice.
  3. Roll 2 1/2 tablespoons of dough between the palms of your hand to form a ball. Place on prepared baking sheet; repeat with remaining batter, spacing cookies two inches apart. Using a dinner fork, press tines into dough, and gently press into biscuit shape. Bake biscuits just until firm to the touch, 12 to 15 minutes. Transfer to a wire rack to cool.

The mother nature has been a nice to us these past few days. The weather was nice, no rain and cloud. We had sunny weather for a week. Amanda and I got to enjoy the warm of the sun and the fresh smell of the grass.

hehehe....tau aza. Engga itu gelas saya udah punya lama, beli di pottery store di Vermont, botol susunya hampir sama, Dwi punya, saya juga punya...:) beda logo doang...
