
As the weather is hotter in Erie, I tried to serve more raw food. One of them is karedok, an uncooked Indonesian vegetables salad.
Indonesia is an archipelago and from every island in Indonesia, we have different kinds of salad. From my hometown, Bandung which located in West Java, we have karedok and lotek. The differences between them are lotek is a cooked vegetable salad and often enough, we add in some fried tofu in it and karedok uses lesser galangale which gives a unique aroma to the karedok.
We are rather lucky to have a farmer market in Erie that sells some of the vegetables needed in the karedok. For the other ingredients,I have to buy them from chinatown in Clevaland, Ohio.

This is my contribution for Masak Bareng Yuk!!! event. This month theme is Indonesian salad and vegetables.

Here is the recipe of Karedok,
For the peanut sauce :
250 gram of ground roasted peanuts
2 bird's eye chilies or none
5 cm of lesser galangale/kencur (you can also find it in powder form)
1 tbsp of Javanese brown sugar
1 tsp of salt
1 tsp of tamarind /lime juice
150 gram of oncom , cooked it for awhile above the fire before adding (I do not use it)
150 ml of warm water
For the vegetable ingredients :
1 cucumber, slice bite size
2 sheets of cabbage leaves, finely sliced
50 gram of bean sprouts
2 apple aubergines, cut bite size
50 leaves of basil leaves
you can also add in other vegetables such as finely sliced of iceberg lettuce, cilantro and snake beans.
Directions :
Add in all the ingredients for the peanut sauce except the water in a food processor and grind it well. Put it in a bowl and mix it with the water.
Meanwhile gather all the vegetables in a salad bowl, pour the peanut sauce over it and mix well. Serve it with emping/kerupuk (Indonesian chips) and fried shallots.
