
I saw many posting of Ontbijtkoek cake lately. Why? well, this cake is the assignment of KBB (Klub Berani Baking or Dare to bake club) to its members. I was attracted by this cake because it did not require butter.
For this cake, I am using Elsye from Dari Dapur Saya's recipe. Elsye is an excellent cook and photographer. I love her simple and classic photographs.
I do not really know the history of this cake except that this cake has a dutch name. According to Wikipedia, Ontbijtkoek is a Dutch spice cake as the cake is fulled of cinnamon, cloves, nutmeg and ginger. It literally means breakfast cookie and it is intended to be eaten for breakfast with butter.
For me, this is my first time baking without butter or margarine. As the result of no butter, the cake did not raise very high and as Elsye wrote, the cake was a bit dry.
Nevertheless, I like the cake even though it was not sweet enough as I reduced the amount of sugar used.

The recipe of Ontbijtkoek
Ingredients :
125 gram of Javanese brown sugar or palm sugar ( I mixed brown sugar and Javanese brown sugar)
5 egg yolks
3 egg whites
Put together :
125 gram of all-purpose flour
1 tsp of ground cinnamon
1 tsp of ground nutmeg
1 tsp of ground cloves
50 gram slivered almonds
Directions :
Heat your oven to 350 F. Meanwhile, beat the egg yolks, whites and the palm sugar until thick and fluffy. Add in gradually the all-purpose flour and spices. Mix well. Get ready a cake/loaf tin, greased and lined with a parchment paper. Pour the mixture in it and bake for 20 minutes until golden brown. Served with a cup of tea.
