
Kolak...you must be wondering what is Kolak? Kolak is an Indonesian banana and sweet potato stew in coconut milk. This dessert is available at all time in Indonesia but more commonly found during the Ramadhan season.
Honestly, I do not use any recipe for making this dessert but this posting will not be complete without a recipe, so I borrow a recipe from another Indonesia blogger, Kedai Hamburg. She used palm seeds which I did not use since I did not have it in hand. However, I added in slice jackfruits from a can.
So this is the recipe courtesy of Kedai Hamburg :
Ingredients :
4 banana/plantains ( I used regular banana)1 sweet potatoes
350 gram of brown sugar or palm sugar
400 ml coconut milk ( or less)
400 ml water
a bit of sugar
2 pandan leaves
Slices of jackfruit (you can buy jackfruit in a can in any Chinese grocery stores)
Directions :
Cut the bananas into 1 inch rounds, set aside. Peel the sweet potato and cut into bite size. Fill a deep pot with water, add in palm sugar, pandan leaves and let it boiled. Add in cut sweet potatoes and boiled for 5 minutes. This time, add in the cut bananas, salt and coconut milk. Let it boiled for another 10 minutes. Make sure you do not over cook, if not you will end up having a mash banana and sweet potato soup.

This dessert can be eaten either cold or warm...
