Hummus

I have been changing my diet and my family's diet recently. We are eating more beans and less red meat. The changes happened naturally over a few weeks. It started with an introduction of Quinoa to our diet then I added in beans like red beans, pinto beans and garbanzo beans. This new diet is perfect for me as I do not like to handle meat whether it is chicken or red meat. We are still eating meat especially in the restaurants but I limit the meat variety to ready to chickens, fishes or shrimps.

One of the dish I like to make and buy is Hummus. I have been buying hummus for awhile and have never tried to make it until now.

I got this Hummus recipe from Rachel Ray in Food Network,

Ingredients:

1 (14.5 ounce) can chickpeas (garbanzo beans), drained
2 rounded tablespoons tahini sesame paste
A drizzle extra-virgin olive oil
1 teaspoon (1/3 palm full) ground cumin
Coarse salt
1/2 lemon, juiced

Directions:

Combine beans, tahini, oil, cumin, garlic, salt, and lemon juice in food processor bowl and grind into a smooth paste.

Many people serve hummus as appetizer but I like to have it as an entree by spreading it on my bread.
As appetizer, you can enjoy hummus with pita chips as suggested by Rachel Ray or with vegetables like red/green peppers, carrots and even asparagus. The choices are endless...
